Therefore, changing the household food basket can directly affect the status of water resources. In this study, water and carbon footprint indices were used to determine the desirability of two Vegan and common food baskets in the community. The results showed that although the United Nations Water Crisis Index (UN/WCI) still shows a severe water crisis by changing the common food basket to a vegan food basket, the promotion and selection of vegan food baskets can reduce the pressure on Iran's water resources and environment. Vegan and common food baskets result in a water footprint of 56.3 and 62.7 BCM, respectively. With a production of 205.5 million tons of CO2 per year, the vegan food basket produces about 3.9 million tons less CO2 than the common food basket. In general, vegan food basket causes a 10% reduction in water consumption and about 2% reduction in carbon footprint compared to the common food basket. In the study of the share of the vegan food groups in water footprint, the group of legumes and nuts (38%) and in terms of produced carbon footprint, the group of vegetables (27%) have the greatest impact on water resources. The results of this study suggest that by changing the common food basket to a vegan food basket, fruit and vegetable food groups should have a greater share in meals. Instead, the consumption of meats, breads and cereals (especially rice) should be reduced.}, keywords = {Carbon footprint,Iran,UN/WCI,water footprint}, title_fa = {ارزیابی مطلوبیت سبد غذایی گیاهی از منظر ابعاد زیست محیطی و مقایسه آن با سبد غذایی رایج جامعه ایرانی}, abstract_fa = {تولید و مصرف غذا، یکی از ابعاد مهم تأثیر کشاورزی بر منابع آب محسوب می‌شود. از این‌رو تغییر سبدغذایی خانوار به‌طور مستقیم می‌تواند بر وضعیت منابع آب تأثیر گذارد. در این پژوهش از شاخص‌های ردپای آب و کربن برای تعیین مطلوبیت دو سبدغذایی گیاهی و رایج جامعه استفاده شد. نتایج نشان داد که اگرچه شاخص بحران آب سازمان ملل (UN/WCI) با تغییر سبدغذایی رایج جامعه به سبدغذایی گیاهی همچنان بحران شدید آبی را نشان می‌دهد اما ترویج و انتخاب سبدغذایی گیاهی، می‌تواند منجربه کاهش فشار بر منابع آب و محیط‌زیست ایران شود. سبدغذایی رایج و سبدغذایی گیاهی به ترتیب ردپای آبی معادل 7/62 و 3/56 میلیارد مترمکعب/سال برای کشور به همراه دارد. سبدغذایی گیاهی با تولید 5/205 میلیون تن CO2 در سال، نزدیک به 9/3 میلیون تن CO2 کم‌تری نسبت به سبدغذایی رایج تولید می‌کند. درحالت کلی سبدغذایی گیاهی سبب کاهش 10 درصدی ردپای آب مصرفی و کاهش تقریباً 2 درصدی ردپای کربن تولیدی نسبت به سبدغذایی رایج جامعه می‌شود. در بررسی سهم گروه‌های غذایی سبد گیاهی از منظر ردپای آب مصرفی، گروه حبوبات و مغزها (38%) و از منظر ردپای کربن تولیدی، گروه سبزیجات (27%) بیشترین تأثیر را بر منابع آب دارند. نتایج این تحقیق توصیه می‌کند که با تغییر سبدغذایی رایج جامعه ایرانی به سبدغذایی گیاهی، گروه‌های غذایی میوه‌ها و سبزیجات سهم بیش‌تری را در وعده‌های غذایی مصرفی داشته باشند و بجای آن از مصرف انواع گوشت‌ها و نان و غلات (به ویژه برنج) کاسته شود.}, keywords_fa = {ایران,ردپای آب,ردپای کربن,UN/WCI}, url = {https://jwim.ut.ac.ir/article_82885.html}, eprint = {https://jwim.ut.ac.ir/article_82885_64eb72f9e20d52755fdcea36aa089f6d.pdf} }
